Description

Jean-Marc Pillot has been making world-class wines since his first solo vintage in 1991. His wines embody the qualities that make Burgundy great, they are classical, refined and stylish. While the majority of his vineyards are in Chassagne-Montrachet, he also has holdings in Puligny-Montrachet, Meursault, and Santenay. 

Long, cool fermentations followed by 15 months ageing in cask give rich, intense, concentrated wines with powerful aromas and opulent fruit on the palate. The wine comes from sixty-year-old vines which produce wines with great intensity and depth. All his wines show well when young but also have sufficient acidity to age gracefully.

Les Caillerets, sourced from vines planted in 1969, is described by Pillot as perhaps the most complete wine amongst the 1er Crus.

Mineral and complex, with so much tension, rippling acidity and ginger and orange blossom. The palate is very textured, with real vibrancy.

A vague whiff of the exotic is present in the form of lychee nut and viognier-like nuances on the assorted white orchard fruit and citrus rind scents. There is both fine energy and volume to the lightly mineral-inflected medium-bodied flavors that brim with dry extract that imparts a sappy texture to the long, balanced and notably dry finale.
