The village of Vertus, in the Cotes de Blancs of Champagne, is home to two great Champagne houses - Larmandier-Bernier and Veuve Fourny, the latter run by Emmanuel and Charles-Henry Fourny where they farm 20 hectares of Premier Cru vineyards on the famous limestone and chalk soils. With an average age of 40 years the vines are farmed organically, while winemaking seeks to elevate the clarity and freshness of Champagne. They thus don't actively seek malolactic character and they use at least 3 years of lees ageing and low dosages of under 6g/L giving a breathtaking freshness and crystalline chalkiness to the wines. These are great wines and absolutely superb value.
