Pieter Walser is one of the most innovative winemakers in the world, and is the producer of some of SA’s most coveted wines that you’ve probably never tasted. Within BLANKbottle there are no 2 wines alike and about 30% of the wines are once-off limited editions. Pieter crafts unique wine blends, picking about 35 grape varieties from 60 vineyards around the Cape. Each of his wines is bottled and labelled according to the unique story behind it. The main aim of BLANKbottle wines is to provide an honest, personal taste with no preconceived expectations that come with certain vintages or styles.
A previous vintage of this was the top-scoring Cinsault in 'Cin City' - a tasting of Cinsaults from around the world in September 2021. Just over 500 bottles made! Pseudonym is made from a small 70-year-old vineyard situated in a little valley into the mountain in Darling. 100% Cinsault, with dainty tiptoeing fruit, exotic spice and some sweet herbal notes, silken tannins and a floating palate. Named for Pieter's pseudonym: “Die konfytkoker van die Strand”, meaning “The jam maker from the Strand"
Vineyard: Single old-vine, unirrigated bush vines in the Darling Mountain. Planted in decomposed granite 204 meter above sea-level on an East facing slope.
Winemaking: The grapes were picked at optimal ripeness and cooled overnight to 4 degrees Celsius. The next morning the grapes were hand sorted and partially de-stemmed. It fermented in open-top fermenters, a combination of destemmed grapes and whole bunches. The juice underwent spontaneous fermentation and stayed on the skins for as long as possible. Aged in older oak for 8 months, blended and bottled.
