Yabby Lake Vineyard was established by the Kirby family in 1998, in Tuerong, which is located in the northern part of the Mornington Peninsula, to the south-east of Melbourne. Close to the cooling South Pacific Ocean this is cool, maritime wine growing area ideal for grape varieties such as Pinot Noir, Chardonnay and Pinot Gris.

Since 2008 Yabby Lake have released Single Block Chardonnay and Pinot Noir to explore the subtle nuances of their vineyard, and even though these are only 10 meters apart from each other, they are remarkably different in character.

The winery's philosophy is to craft a chardonnay of great purity and attention and care in the vineyard is most critical to allowing that expression. Each parcel of chardonnay was carefully and handled separately in the winery, with minimal intervention. The chardonnay was then whole bunch pressed and transferred with solids, into tight grain 500L French oak puncheons (20% new) to undergo natural fermentation. It was then left to mature on lees for 12 months/

Ageing the wine on its lees adds the creamy and round character to this wine without losing any of the important fresh citrussy and stone fruits aromas. Precision and purity are the hallmark characteristics for Yabby Lake's Single Vineyard Chardonnay which we love so much! It is always fine and elegantly structured. Subtle, toasty oak provides a background for the citrus and white peach flavours and the acidity lingers and extends the finish. Like a well-made Burgundy, this wine takes advantage of being cellared for a few years.
