A refreshing cava with surprising complexity from extended lees-ageing, this is a wine that offers excellent value whilst retaining plenty of character.
Grapes are sourced from 30 to 66 year old vineyards, with altitudes ranging from 50 metres (for the Macabeo) to 700 metres above sea level (for the Parellada). Soils are of granitic and clay origin. Climate is Mediterranean semi-arid, with varying microclimates depending on altitude.
Grapes are manually harvested and undergo pre-fermentative maceration during two hours before fermentation of base wine. Second fermentation occurs in bottle, at 13 to 15 degrees, for 15 months. Wine rests on its lees for 9 to 12 months, and is then riddled during 72 hours using a Giropalette machine. No dosage is added after the disgorgement.
