Description

One of the most heralded boutique wineries in Australia with winemaking now under the reins of the founder Phillip Jones and new Chief Winemaker, Jean-Marie Fourrier of Burgundy fame.

The 14-hectare property is located in Gippsland, Victoria, southeast of Melbourne, and has been farmed organically (since 1993) and biodynamically since 2002, although without being certified. The plantings are relatively dense, with as many as 9,000 vines per hectare, and yields approximate 1 to 1.5 tons per acre. Up to 60% new oak is used in the Estate Pinot Noir, with the Chardonnays seeing 20% new oak (all French). There's an emphasis on natural acidity and delicate handling in the winery.

The Estate Chardonnay is grown at Leongatha South, South Gippsland, Victoria. Bass Phillip uses close planting, extremely low cropping, no toxic chemicals, & natural winemaking. They respect the forces of nature, driven by the Moon, the Planets, and the Earth. This wine always has intensity, full natural acidity and great length. It will develop over the next eight years plus. Normally Estate chardonnay was matured in approximately 20% new oak. It has aromas of Lifted citrus & stone fruit. Well balanced, vibrant fruit and great acid structure. Subtle notes of toasty oak underlay, creating a well rounded palate.
