Idea Bacco is made in the Amarone style and method, but as the Agostino winery is based in Soave and not in Valpolicella then legally they cannot label this wine Amarone - meaning that we have a bargain wine here for those in the know.
Just like Amarone production, the grapes are harvested and then air dried until early December, dehydrating and losing around 40% of their weight in water. The grapes are then fermented to dryness and matured in large tonneau (900L barrels) for around 18 months. This has lovely depth and a great combination of dark chocolate, spice and dark red fruits while the tannins are soft and gently drying. A great combination of power and elegance this would be a great wine to have at home for the coming cooler months.
