Description

Ridgeback Wines is situated in the northern part of the picturesque town of Paarl in the Western Cape, on the northern slopes of the magnificent Paarl mountain. The farm extends over an area of 65 hectares. Retaining the rich heritage of the countryside’s proteas and fynbos, which flourish in the region. The vineyards are amongst the finest in the Cape, and the winery, which overlooks a small dam, is home to an abundance of water fowl which add to the beauty and peaceful ambience of this tranquil environment.

Ridgeback Wines has been awarded numerous accolades and medals since 2001, both locally and abroad. Esteemed winemaker, Toit Wessels, goes from strength to strength, refusing to settle for anything less than the best being released from the cellar.

One of South Africa's finest Cabernet Francs, the award-winning North- South facing vineyard used for this wine is grown in deep Oakleaf soil and the shoots are vertically positioned. The vineyard is irrigated according to soil moisture availability schedules. Leaf plucking in the bunch zone and meticulous detail to the removal of any green berries enables efficient sunlight penetration into the canopy ensuring ripe tannins and optimal berry flavour at harvest

Maturation in 33% new, 44% second fill and 23% third fill French oak barrels lasted for 15 months and the wine was then lightly filtered prior to bottling.

Upfront blackcurrant with hints of green peppercorn and black olive cradled by elegant, ripe tannin and oak spice on the long mineral finish
