David Ramey is one of California's greatest winemakers and his Chardonnays are representative of the beauty and hedonistic pleasure one expects from Californian wines. A long-time proponent of Burgundian winemaking techniques, David handles his juice oxidatively to stabilise the juice early and build in texture, while the wines are always barrel fermented (now only around 25-30% new) and always go through malolactic fermentation which is one of the key features of the great silkiness of these wines, and why they are so deliciously drinkable.
