Col Fondo is the original method of making Prosecco - a technique called method ancestrale. The first parts of production are identical to Champagne, with the secondary fermentation taking place in the bottle. Col Fondo, however, is not disgorged like Champagne and is sold with the crown cap still in place, hence the wine is both dry and cloudy from the retained yeast lees. This is as natural as Prosecco winemaking can get and a fascinating mouthful of ripe apple fruit and dense, savoury textures. Try it out!
