Now run in the fourth generation, Bernard Defaix started with 2 hectares in 1959. The two sons of Bernard have been managing the domaine since more than twenty years, Sylvain is in charge of the vinification, the ageing, the bottling and Didier takes care of the vineyard and the general management of the estate. Helene, Didier’s wife, looks after the administrative and the commercial part.
The Domaine's vines on the appellation Chablis spread over 12 hectares, situated at the heart of the Chablisian vineyard. This wine is aged in stainless steel tanks so as to respect the typicity of the appellation.
The Domaine farms sustainable and organic. Soils are worked by ploughing exclusively, and no chemicals are applied, and in recent years they have been experimenting with biodynamic preparations, for example 500P (horn manure) for the soils vitality, the 501 to stimulate the foliage and the photosynthesis as well as other “herb teas”.
