We have decided to sell under crown cap, so it is undisgorged which means it’s a little cloudy. The fact it is undisgorged means it continues to evolve in the bottle, getting more delicious each time you open a bottle.
GMF is a traditional method sparkling wine made from grapes sourced from Yew Tree Vineyard in Oxfordshire. The grapes are hand-picked and hand-sorted, then they travel the short distance to our Battersea winery where they are whole bunch pressed into a mix of stainless steel tanks and old Burgundy barrels for fermentation. The combination of tanks and barrels offers a depth and complexity that enhances aromas of elderflower, citrus and white pepper. The wine spends a further 6 months ageing on lees prior to bottling and secondary fermentation.
