Continuing in the vein of Vol I and Vol II, and very different from its predecessors, we have created a non-vintage white blend using the 2019/20 vintages and the the 3 champagne varieties, chardonnay, pinot noir and pinot meunier.
Whole bunch pressed into Burgundy barrels and indigenously fermented separately . Both wines spent 7-18 months on gross lees and then blended together before bottling. 5 % new oak
Full of ripe stone fruits, hints of citrus zest, raspberry, and strawberries . Palate show slight hints of vanilla , white flowers, ginger root, and pink grapefruit.
